Wilmington Restaurant Week starts Wednesday, October 20th, and that means a host of chefs are frenetically chopping, prepping, styling and perfecting their most flavorful dishes for the dining public. Among them is Kevin Winebar, leading the seafood succulence served on every plate at Fish Bites, located in Monkey Junction.
Winebar took time out from the throes of WRW chaos to answer a few questions about his experiences in the industry and share some of his own guilty pleasures.

e: How long have you worked in the restaurant industry?
KW: 16 years
e: What have you learned to be the most important trait and skill to have in the kitchen?
KW: Patience, knowing how to deal with things when it gets heated.
e: What has been your most amazing day as a chef and why?
KW: When I worked in New Orleans and learned how to cook their style of amazing food.
e: How long have you been at the current restaurant?
KW: Since it first opened in July 2009
e: What can diners expect of your menu during WRW, fall 2010?
KW: The freshest seafood in town
e: What do you love most about Wilmington’s culinary scene, and if you had a magic wand to wave for improvement, what would be the first order of business?
KW: I like how the scene is getting notice more. It would be great to have more cookoffs in town like the Chowder Cook Off or Wing Fling.
e: Your favorite meal?
KW: Fried pork chops and mac-n-cheese
e: Your favorite guilty pleasure?
KW: Chocolate chip pancakes
